The grapes grow on limestone soils on south-facing slopes —a foundation that imparts freshness and a delicate mineral tension to the wine. In the glass, the Pompette displays a lively interplay of exotic fruits and floral notes , which unfold lightly and fragrantly on the palate. The perlage is fine, the finish summery and fresh—not at all heavy, but also not generic.
Ideal as an aperitif on warm evenings, for uncomplicated toasts with friends, or as a refreshing accompaniment to:

- Salads with citrus dressing
- mild goat cheese
- fresh berries and fruit tarts

Matthias Gaul runs his winery in Grünstadt-Asselheim as the fourth generation of a winemaking family that laid the foundation in 1956 with their first bottled wine. At the northernmost tip of the German Wine Route, where winds from the Eis Valley create a cool microclimate, he cultivates 35 hectares primarily of Burgundy varieties – some in close plantings at an altitude of 300 meters, on pure limestone bedrock. VINUM magazine named him "King of Pinot" in 2017, and he has won the German Red Wine Award twice. Anyone who drinks his Pinot Gris or Pinot Noir will understand why these are not empty accolades.
