Matthias Gaul relies on the traditional method of bottle fermentation : The sparkling wine matures on the lees, developing its characteristic depth and fine creaminess – a method that demands time and care, but gives everything back in the glass. The color is a delicate salmon pink, the perlage fine and persistent. The bouquet reveals fresh red berries – strawberry, raspberry, a hint of red currant – and in the background, subtle brioche notes, as are known and appreciated in mature sparkling wines.

On the palate, it presents itself as clear, dry, and lively : invigorating acidity, well-integrated fruit, and a fresh, mineral-tinged finish. Not a sparkling wine that makes a lot of noise—one that convinces.

Matthias Gaul

Matthias Gaul runs his winery in Grünstadt-Asselheim as the fourth generation of a winemaking family that laid the foundation in 1956 with their first bottled wine. At the northernmost tip of the German Wine Route, where winds from the Eis Valley create a cool microclimate, he cultivates 35 hectares primarily of Burgundy varieties – some in close plantings at an altitude of 300 meters, on pure limestone bedrock. VINUM magazine named him "King of Pinot" in 2017, and he has won the German Red Wine Award twice. Anyone who drinks his Pinot Gris or Pinot Noir will understand why these are not empty accolades.
