Matthias Gaul Pinot Brut Nature isn't a sparkling wine for every occasion – it's for those who truly want to understand what's in the bottle. Purist, precise, uncompromising: nothing is added, nothing is embellished.

Matthias Gaul vinifies this sparkling wine using the classic method with secondary fermentation in the bottle – and completely forgoes dosage after disgorgement. This means: 0 grams of residual sugar per liter , no added sugar, no topping up. What you have in your glass is solely what the grape, yeast, and the Palatinate soil have created together.

In the glass, it displays a pale straw yellow color with fine, persistent bubbles. The nose is lively and clear: green apple, citrus peel, a touch of white peach – along with delicate yeasty notes reminiscent of fresh brioche, indicating the traditional method of bottle fermentation. On the palate, a precise, invigorating acidity takes center stage. The minerality of the calcareous Palatinate soils carries the wine through a long, elegant finish.

Recommended companion:

  • Oysters and raw seafood – a classic that really works here.
  • Lightly grilled fish, ceviche or sashimi

Matthias Gaul

Matthias Gaul runs his winery in Grünstadt-Asselheim as the fourth generation of a winemaking family that laid the foundation in 1956 with their first bottled wine. At the northernmost tip of the German Wine Route, where winds from the Eis Valley create a cool microclimate, he cultivates 35 hectares primarily of Burgundy varieties – some in close plantings at an altitude of 300 meters, on pure limestone bedrock. VINUM magazine named him "King of Pinot" in 2017, and he has won the German Red Wine Award twice. Anyone who drinks his Pinot Gris or Pinot Noir will understand why these are not empty accolades.
