Pinot Bianco from South Tyrol is a grape variety that demands precision – and Castelfeder delivers it. The “Vom Stein” demonstrates what cool mountain slopes can do for this grape: clear structure instead of opulence, mineral depth instead of heaviness.
The Castelfeder winery is located in Neumarkt an der Etsch, in the heart of the Überetsch region – a landscape that oscillates between Alpine climate and Mediterranean influences. The Pinot Bianco grapes for this wine grow on stony, well-drained soils, which give the wine its distinctive character. Fermentation takes place in stainless steel tanks, after which the wine matures for six months on its fine lees – long enough to develop texture without sacrificing freshness.
In the glass, it displays a pale straw yellow color. The nose offers aromas of white peach, pear compote, and a hint of almond, along with a subtle floral note of acacia blossom. On the palate, it is lean and taut, with lively acidity softened by a light, creamy texture – a result of lees aging. The finish is salty and mineral, and long.
Serving suggestion: Best served at 10–12 °C. Pairs well with asparagus with hollandaise sauce, pan-fried pike-perch, or mild goat cheese. Drinking window: now until 2027.
