Pinot Bianco from South Tyrol is a grape variety that demands precision – and Castelfeder delivers it. The "Vom Stein" shows what cool mountain sites can do with this grape: clear structure instead of opulence, mineral depth instead of heavyweight.
The Castelfeder winery is located in Neumarkt an der Etsch, in the middle of the Überetsch – a landscape that oscillates between Alpine climate and Mediterranean influence. The Pinot Bianco grapes for this wine grow on stony, well-drained soils, which give the wine its namesake character. It is fermented in stainless steel tanks, and the wine then ages for six months on the fine lees – long enough to build texture without sacrificing freshness.
In the glass, it shows a light straw yellow. On the nose, white peach, pear paste, and a hint of almond, plus a subtle floral note of acacia blossom. On the palate, slim and taut, with a lively acidity that is cushioned by a light creamy texture – the result of the lees aging. The finish is salty-mineral and long.
Serving recommendation: Best at 10–12 °C. Goes well with asparagus with hollandaise sauce, fried zander, or mild goat cheese.
