Additionally, the intense heat partially dries the grapes, increasing their sugar content. All grapes are harvested by hand and processed into wine under the supervision of the winemakers. Vigneti del Salento cultivates grape varieties such as Negroamaro, Montepulciano, Primitivo, and Merlot.
