After destemming and gentle pressing of the grapes, the must is fermented with the skins at a controlled temperature for 8-10 days, with regular pump-overs. Malolactic fermentation takes place in stainless steel tanks before racking off the lees. The young wine then ages for a further 6-8 months in used American and French oak barrels before bottling. In the glass, this Primitivo-Merlot displays a very intense ruby-red color. Its rich aroma of ripe red fruits, cherries, and berries, with hints of cinnamon, makes it a wonderful accompaniment to aged cheeses and perfect for enjoying with friends.

Vigneti del Salento is an Italian winery located in the Apulia region. The prevailing climate facilitates grape development through temperature fluctuations between day and night and the proximity to the sea. Additionally, the intense heat partially dries the grapes, increasing their sugar content. All grapes are harvested by hand and processed into wine under the supervision of the winemakers. Vigneti del Salento cultivates grape varieties such as Negroamaro, Montepulciano, Primitivo, and Merlot.
