Santa Digna Sauvignon Blanc Reserva

A bright yellow color with greenish reflections and an incredibly fruity, floral aroma immediately make you want a glass! The nose offers plenty of typical gooseberry, along with lime, notes of tropical fruits, and freshly cut green apple. On the palate, a beautifully balanced, vibrant interplay of fruit and the concentrated aromatics of Sauvignon Blanc linger into the elegant, long finish. The white grape varieties possess an excellent balance of alcohol and acidity, which lends the wines a juicy freshness and vibrancy. The Sauvignon Blanc grapes are harvested fairly quickly, starting in mid-March. Sauvignon Blanc, in particular, is a grape variety whose fresh fruitiness depends entirely on the precise harvest date (especially under extreme heat!). The grapes are pressed immediately upon arrival at the winery, and the must is fermented for approximately 21 days at 18°C ​​in stainless steel tanks.
