Santa Digna Carmenère Gran Reserva

The grapes, harvested from mid-April onwards, were fermented separately for seven days at 28°C and then left on their skins for another month to extract tannins, color, and flavor compounds. The wines then matured separately for 12 months in Nevers oak barrels (20% new), before being blended into the final cuvée and aged for a further three months in the bottle before the Reserva was finally released. The Santa Digna Carmenère Gran Reserva presents itself in a juicy cherry red color, with a lush bouquet of blackberries and blackcurrants; these are complemented by slightly balsamic, eucalyptus-like notes and subtle fruit nuances of mandarin orange. On the palate, elegant fruit dominates with almost sweet tannins and delicate spicy aromas of licorice, black pepper, and cloves; aging in French oak imparts further subtle toasty notes with a hint of vanilla.
