PESTO ROSSO - with dried tomatoes

This Pesto Rosso is made according to our own recipe from dried tomatoes, Grana Padano, cashew nuts and extra virgin olive oil — deliberately without garlic, so that the fruity tomato note remains clearly in the foreground.

The combination of the nutty crunch of the cashews and the salty melt of the Grana Padano cheese creates a full-bodied yet light texture. Stirred directly into hot pasta or served on toasted bread as bruschetta—both work perfectly without any additional ingredients.

It pairs well with a dry Vermentino from Sardinia or a light Barbera d'Asti, which complements the tomato acidity without overpowering it.

Viani has been importing Italian and Mediterranean delicacies to Germany since 1973 – founded by Antonio Viani from Pietra Ligure, today managed by his son Remo. Around 3,000 products from about 400 artisanal producers: cold-pressed olive oils, handmade pasta, balsamic vinegars, antipasti, and rarities such as caper leaves from the island of Salina.
