Lingue di suocera con parmigiano

Lingue di suocera — literally "mother-in-law's tongues" — are a classic Italian snack: wafer-thin, crispy strips of dough, here refined with grated Parmigiano Reggiano. The base is a sourdough, which gives the sticks a slight depth that ordinary savory snacks lack. Olive oil provides the golden texture, and the Parmesan adds a savory, slightly nutty finish.

As an accompaniment to a glass of wine, they are more versatile than grissini: with a dry Prosecco or Franciacorta, a light Vermentino, or a glass of Lambrusco secco. They also go well alongside a selection of cheeses or an antipasti platter— best served at room temperature so that the olive oil aroma can fully develop.
