PESTO - with Genoese basil DOP, without garlic

Garlic-free pesto – for those who want the pure basil flavor to shine through. This pesto comes from Liguria and uses Genoese basil with a protected designation of origin (PDO): mild, slightly sweet, without the sharp overpowering taste of garlic.

The consistency is intentionally chunky – not a smooth, industrially produced product, but a pesto with texture. The revised recipe replaces the previous version and retains its regional character.

Perfect with trofie, linguine, or as a dip for focaccia. Also delicious on grilled vegetables. Pair it with a Ligurian Vermentino or a light, dry white wine from Northern Italy – well chilled at 10–12 °C .
