Lingue di suocera

Lingue di suocera—"mother-in-law's tongues"—are a traditional Piedmontese pastry: paper-thin, elongated dough sheets made of flour, water, salt, and olive oil. No frills, no yeast, no fat other than the oil—the simplicity of the ingredients is the concept.

Mario Fongo produces them in the manufacturing tradition of Piedmont, where this pastry has been served as a bread alternative for generations. The texture is what makes them special: crispy-flaky, almost like puff pastry, but lighter and more neutral in taste.

They pair excellently with wine—as an uncomplicated companion to Piedmontese soft cheese like Robiola or Toma. Also as a mini-panino with cold cuts or simply on their own for an aperitivo. Serving temperature: Room temperature.
