Rubatà Breadsticks

Rubatà are the Piedmontese original form of the breadstick—thinner, more irregular, and crunchier than the machine-made version from the restaurant basket. Mario Fongo rolls them by hand: each stick is unique with a slightly twisted surface, rough structure, and approximately 27 cm in length.

Baked with olive oil, they create a bite that shatters immediately and releases a nutty, warm grain aroma—with a subtle salt note in the finish. The uneven surface holds cold cuts and soft cheese better than smooth sticks.

Classically wrapped with paper-thin slices of Parma ham. Just as convincing with Taleggio, young Pecorino, or Gorgonzola dolce. As an aperitivo accompaniment, a glass of Barbera d'Asti or a dry Franciacorta fits well—the saltiness of the breadsticks highlights the fruit of both wines.
