Olio extra vergine Orcio Aragosta
From the Peranzana olive, an autochthonous variety from Northern Apulia, the family business Muraglia presses this medium-fruity olive oil. The Peranzana is considered one of the most aromatically unique varieties in the region — rarely found outside of Apulia.
On the palate, the oil shows a balanced center: green herbs, a hint of ripe almond, and a mild peppery finish. No sharp bitterness, but enough structure to stand up on good bread or over vegetables. The characteristic ceramic jugs with the lobster motif are Muraglia's trademark — hand-painted majolica from the region that also keeps the oil protected from light.
On bruschetta, with grilled fish, or over burrata. Store in a cool, dark place; do not use for high-heat searing.
