A Rosato from Mount Etna – that means: volcanic minerality meets Mediterranean fruit. The Le Sabbie dell'Etna Rosato DOC from Firriato shows what the sandy soils of the volcano can bring out in the Nerello Mascalese grape.
Firriato is one of Sicily's most renowned wineries, cultivating vineyards on Mount Etna at altitudes of over 600 meters. The volcanic sand soils (hence "Le Sabbie" – the sands) ensure natural drainage and force the vines to root deeply. Nerello Mascalese, the volcano's classic red wine grape, is vinified here as a Rosato – short maceration and early harvest for maximum freshness.
In the glass, the wine shines a bright salmon pink. The nose reveals raspberry, pomegranate, and a delicate hint of dried herbs – thyme, perhaps a touch of lavender. On the palate, lively acidity, medium body, a salty finish with pronounced minerality – the hallmark of the Etna soils.
Serving temperature: 10–12 °C. Drink now, no need for long cellaring.
Goes well with: grilled octopus, burrata with tomatoes, light pasta al pomodoro or as an aperitif on warm evenings.

Firriato – a winery in Sicily, founded in 1985 by Salvatore Di Gaetano and his wife Vinizia Novara. What they have built is now one of the largest and most highly regarded wineries on the island.
