Cavanera Ripa di Scorciavacca Etna Bianco DOC

White volcanic wine from the northern slopes of Mount Etna – mineral, firm, with a depth that one wouldn't necessarily expect from Sicily.

Firriato is one of the few wineries that consistently translate the power of Mount Etna into wine. The estate cultivates vineyards at altitudes of over 700 meters, where volcanic ash soils, cool nights, and Atlantic winds give the Carricante – the classic white grape variety of Etna – a precision more commonly associated with northern Italian white wines. Cavera Ripa di Scorciavacca is the single-vineyard cuvée from this terroir.

In the glass, the wine displays aromas of yellow apple, mirabelle plum, and wildflowers, underpinned by a characteristic hint of seaweed and fresh herbs. The acidity is present and lively, the mouthfeel lean and focused – not a sumptuous southern wine, but one with backbone and a salty, lingering finish.

Serving temperature: 10–12 °C. Pairs well with grilled sea bass with caper butter, spaghetti alle vongole, or a mild goat cheese. Drink by 2028.

Firriato

Firriato – a winery in Sicily, founded in 1985 by Salvatore Di Gaetano and his wife Vinizia Novara. What they have built is now one of the largest and most highly regarded wineries on the island. Six locations in western Sicily, encompassing around 300 hectares of vineyards on tuff and red sand. They produce 4.25 million bottles annually, three-quarters of which are exported to over 30 countries. Predominant grape varieties are Nero d'Avola and Grillo, along with Cabernet Sauvignon, Chardonnay, and Syrah.
