Cavanera Ripa di Scorciavacca Etna Bianco DOC

White volcanic wine from the northern flank of Mount Etna – mineral, taut, with a depth you wouldn't necessarily expect from Sicily.

Firriato is one of the few wineries that consistently translates the power of Mount Etna into bottles. The estate cultivates sites at over 700 meters altitude, where volcanic ash soils, cool nights, and Atlantic winds give Carricante – the classic white grape variety of Etna – a precision that otherwise reminds more of northern Italian white wines. Cavanera Ripa di Scorciavacca is the single-vineyard cuvée from this terroir.

In the glass, the wine shows aromas of yellow apple, mirabelle, and field flowers, underlaid by a characteristic hint of seaweed and fresh herbs. The acidity is present and invigorating, the mouthfeel lean and focused – not a lush southerner, but a wine with backbone and a salty, long-lasting finish.

Serving temperature: 10–12 °C. Pairs with grilled sea bass with caper butter, spaghetti alle vongole, or a mild goat cheese.
