as, if! Appassimento Primitivo
Appassimento from Apulia: For this method, the Primitivo grapes are wilted on straw mats or in drying rooms after harvesting, before fermentation. The loss of water concentrates the sugars, aromas, and tannins – the principle is the same as for Amarone from Valpolicella, only implemented here in the south with the Primitivo grape.
In the glass, a deep ruby red with purple reflections. On the nose, candied orange peel, Amarena cherry, and rose petals, along with spicy coffee notes. On the palate, juicy and full-bodied, with a light spiciness and a long finish.
Torrevento cultivates its vineyards in the province of Terra di Bari, not far from the Alta Murgia National Park in Apulia – one of the hottest and driest wine regions in Italy, which gives Primitivo its characteristic ripeness.
Pairs well with braised lamb, venison ragù, or strong hard cheeses such as stagionato pecorino. Serving temperature: 16–18 °C.
