as, if! Appassimento Primitivo – Torrevento (Italy, Apulia)
The wine is the centerpiece of the set. The Primitivo grapes are withered after harvest before they are fermented. You know the principle from Amarone; here, Torrevento implements it in the south with Primitivo. Due to the loss of water, aromas and tannins become concentrated. In the glass, it shows a deep ruby red with purple reflections; on the nose, candied orange peel, Amarena cherry, and rose petals, plus spicy coffee notes. Juicy and full-bodied on the palate with a long finish.

Ragù di Cinghiale – Alpe Magna (Italy, Dolomites)
Wild boar, slowly braised with vegetables, red wine, and a pinch of cocoa. The cocoa gives the sauce dark depth and rounds off the strong game notes without making it too sweet. The consistency is creamy, the meat falls apart, and the finish is long and spicy. Serve freshly warmed and hot.

Pici dritti al tartufo – Viani (Italy, Tuscany)
Hand-rolled pici made from durum wheat semolina and egg, thicker than spaghetti, with a rough surface that the sauce clings to. The summer truffle is subtle but clearly perceptible. When cooked, they remain al dente: slightly textured on the outside, soft on the inside. With the wild boar ragù, this makes for a rustic dish.

Chocolate Cigar Truffle Nougatine – Venchi (Italy, Piedmont)
The cigar-shaped praline has a filling of cocoa cream with caramelized pieces of Piedmont IGP hazelnuts. When you bite into it, creamy meets crunchy, accompanied by roasted aromas of hazelnut and caramel. It goes well with an espresso or as a finish after the meal.

Goes with: Pici with wild boar ragù as a main course, the Primitivo in the glass to accompany it, and finally the chocolate cigar with an espresso. The wine also pairs with the ragù on its own with coarse polenta or wide ribbon noodles like pappardelle.
