Mount Hermon Cabernet Sauvignon

An accessible Cabernet Sauvignon from the Golan Heights – with a classic varietal profile and a clear focus on drinking pleasure rather than cellaring.

Golan Heights Winery is located at an altitude of around 1,000 meters in northern Israel. The volcanic basalt rock and cool nights at the foot of Mount Hermon ensure slow ripening and a natural acidity structure – unusual for the region, but noticeable in the glass. The Mount Hermon line is the winery's entry-level range, kosher certified according to the Lamehadrin standard and approved for Passover.

The nose reveals blackberry and plum, complemented by notes of thyme, black pepper, and a hint of damp earth. On the palate, medium body, moderate tannins, pleasant spice on the finish. Not a wine for the long haul – but one that impresses young and uncomplicated.

Serve at 16–18 °C. Pairs with lamb chops with rosemary, fried ground beef, or spicy merguez from the grill. Also a solid choice as an accompaniment to medium-aged cheddar or Manchego.
