A classic that never gets old. White asparagus, freshly peeled, cooked in lightly salted water with a pinch of sugar and a squeeze of lemon until tender but still slightly firm. Served with a homemade hollandaise sauce made with egg yolks, butter, and a hint of nutmeg—and small new potatoes steamed in their skins. Add a few slices of ham if desired.
