White Burgundy from Mercurey — one of the few appellations of the Côte Chalonnaise that show that Chardonnay south of the Côte de Beaune can develop just as much depth as its more famous neighbors.
Chanson Père & Fils is one of the most traditional négociants and domaines of the Côte de Beaune, with roots dating back to 1750. Mercurey is the most important appellation of the Côte Chalonnaise — limestone soils, slightly cooler climate than in Meursault, but similar mineral character. The Blanc from this village is not an entry-level Chardonnay, but a serious white wine with substance.
In the glass, it glows golden yellow with green reflections. The nose opens with white peach and mirabelle, plus a hint of vanilla from the wood aging and a subtle flint note in the background. On the palate, it shows density without heaviness: the acidity is present and invigorating, the minerality gives the wine length and tension. Not a lush, buttery Chardonnay — rather taut, with a dry, slightly nutty finish.
Serving temperature: 11–13 °C. Pairs well with zander with beurre blanc, chicken in cream sauce, aged Comté, or scallops with pea purée.
