White Burgundy from Mercurey — one of the few appellations of the Côte Chalonnaise that show that Chardonnay south of the Côte de Beaune can develop just as much depth as its more famous neighbors.

Chanson Père & Fils is one of the most traditional négociants and domaines of the Côte de Beaune, with roots dating back to 1750. Mercurey is the most important appellation of the Côte Chalonnaise—calcareous soils, a slightly cooler climate than in Meursault, but a similar mineral character. The Blanc from this village is not an entry-level Chardonnay, but a serious white wine with substance.

In the glass, it shines a golden yellow with green reflections. The nose opens with aromas of white peach and mirabelle plum, along with a hint of vanilla from the oak aging and a subtle flint note in the background. On the palate, it displays density without heaviness: the acidity is present and invigorating, while the minerality lends the wine length and tension. Not a sumptuous, buttery Chardonnay—rather, it's taut, with a dry, slightly nutty finish.

Serving temperature: 11–13 °C. Drinking window: now until 2028. Pairs well with pike-perch with beurre blanc, chicken in cream sauce, aged Comté cheese or scallops with pea purée.
