Disobedience

Disobedience is the result of an unusual friendship: Kaiken Wines and celebrity chef Francis Mallmann — known from the Netflix documentary Chef's Table — celebrate their collaboration with this Malbec, which unites two contrasting terroirs of Mendoza.

The grapes come from Vistalba (Luján de Cuyo), where alluvial soils produce rich, complex wines, and from Altamira in the Valle de Uco, where limestone soils contribute freshness and varietal character. Fermentation takes place in concrete eggs, followed by 15 months of aging in French oak barrels (30% new, 70% used), and then six months of bottle aging. The nose is fruity and spicy with notes of nut and graphite, while the palate offers silky pulp, sweet, ripe tannins, and a long finish with hints of dark chocolate.

Goes well with grilled beef steak, leg of lamb or mature Manchego cheese — best served at 17–18 °C.
