The Dreissigacker Riesling comes from the biodynamically cultivated vineyards around Bechtheim and Westhofen. The grapes are selectively hand-harvested to ensure the highest quality. During spontaneous fermentation, whole berries are deliberately fermented to give the Riesling exceptional depth and structure. The wine matures 90% in stainless steel tanks and 10% in double-barreled oak barrels. After fermentation, the Dreissigacker Riesling rests on the lees for six months and is then aged on the fine lees until bottling.

The German winery Dreissigacker is located in Rheinhessen and was founded in 1728. The current owner is Jochen Dreissigacker, who manages a total vineyard area of 28 hectares. This area is divided among several vineyard sites (including Bechtheimer Geyersberg and Bechtheimer Hasensprung) consisting of loess loam, calcareous marl, limestone, and clay soils. The winery places particular emphasis on the cultivation and production of Riesling wines, which accounts for more than half of the vineyard area. Other grape varieties cultivated include the Burgundy varieties Pinot Blanc, Pinot Gris, and Pinot Noir, as well as Chardonnay and Pinot Noir. Dreissigacker produces 180,000 bottles of wine annually. Eichelmann 2021 awarded it the title of "World-Class Winery" *****
