Zero grams dosage, full vintage character: the Roederer Starck Brut Nature is Louis Roederer's purist answer to the question of how far one can reduce Champagne to its essentials — without losing depth.
Louis Roederer is one of the few large Champagne houses that sources a large portion of its grapes from its own holdings. The collaboration with designer Philippe Starck produced not only an iconic bottle design but also a unique philosophy of style: no residual sugar, no correction, only what the grape and vintage provide. The base is Chardonnay from Cumières, a village on the Marne with a chalky subsoil and south-facing slopes.
In the glass, it shows a bright golden yellow with fine, consistent perlage. The nose is clear and precise: green apple, citrus zest, a hint of white flowers, and a mineral chalk note. On the palate, taut, with lively acidity and a dry, long-lasting finish without any fluff — exactly what zero dosage promises.
Best served at 7–9 °C. The Brut Nature accompanies oysters, scallops, or sashimi just as convincingly as an aperitif where you want to show everything rather than mask anything.

Since its founding in Reims in 1776, the Louis Roederer estate has remained in the same family. Today, it is one of the most important independent family-owned wineries in Champagne. Frederic Rouzard, a direct descendant of Louis Roederer, is the current Director General. His goal is to create the Champagne of tomorrow, ensuring that Louis Roederer will still be a benchmark in 20 years' time. The vineyards cover a total area of 240 hectares, exclusively in Grand Cru and Premier Cru sites along the Marne River. Since 2001, the majority of the estate has been undergoing a gradual conversion to biodynamic farming, which is scheduled for completion in 2020.
