For his three-year-aged Brandy Italiano, Jacopo Poli distills Trebbiano wine from the Venetian wine-growing region of Soave. The white grape variety Trebbiano also plays a significant role in the production of fine brandies in French Cognac, though there it is known as Ugni blanc. At the Poli Distillery, the wine is distilled in a copper pot still using the traditional, discontinuous method. The term "discontinuous" describes the elaborate process in which the distillation is stopped after each distillation run, the spent fuel is removed, replaced with fresh fuel, and only then is the next distillation run started. The wine is heated in the copper pot still until the spirit (ethanol) evaporates, rises into the condenser, condenses, and flows as distillate into a test bell. Here, the true art and years of experience of the master distiller come into play. With great sensitivity, he cuts off the heads and tails, preserving only the exquisite heart of the brandy with its finest aromas. To reach its full potential, the high-proof brandy is aged for three years in French Allier oak barriques, gradually brought down to a moderate 40% ABV through the careful addition of distilled water. After maturation, Poli chills it to -6°C and bottles it, gently filtered, as Brandy Italiano. Color: warm golden brown to mahogany. Aroma: warm, spicy scent of coffee, nutmeg, and vanilla. Taste: smooth, rounded, spicy, and robust on the palate.

Po' di Poli – unassuming in name, masterful in glass. For this grappa from the Poli distillery, the addition of "Morbida" (soft, gentle) perfectly captures its essence. The pomace comes from Muscat Blanc grapes grown in the Euganean Hills and is distilled drip-fresh in a copper pot still using the traditional, discontinuous method. The master distiller skillfully separates the heads and tails, retaining only the exquisite heart of the distillate. After six months of rest in stainless steel tanks, the grappa is gently filtered. The result: a grappa of gentle softness and delicate aroma. Truly Poli.
