Sarpa di Poli in gift box

Sarpa means pomace in the Venetian dialect. Accordingly, the pomace for Poli's Sarpa di Poli naturally comes from the Veneto region (even if the grape variety blend sounds more like a red Bordeaux). The grape skins and seeds are delivered to the Poli distillery while still dripping fresh and are traditionally distilled in an old copper still using the discontinuous method. The term "discontinuous" describes the elaborate process in which the distillation is completely stopped after each distillation run to replace the used pomace with fresh pomace. The pomace is heated in the copper still, the ethanol (the grape spirit) rises into the cooling coil, condenses, and flows as spirit into a test bell. Here, the master distiller's skill and years of experience come into play, as he carefully cuts off the heads and tails, preserving only the exquisite heart of the spirit with its finest aromas. The fresh distillate now contains a good 75% ABV. Alcohol and therefore must be carefully diluted to a moderate 40% ABV by adding distilled water. Poli allows his grappa to rest in stainless steel tanks for at least six months before it is finally chilled to -6°C, gently filtered, and bottled. Sarpa di Poli has aromas of fresh herbs, mint, and delicate floral notes of rose and geranium blossoms. Taste: rustic and powerful – an honest, no-frills grappa for pure enjoyment.

Po' di Poli – unassuming in name, masterful in glass. For this grappa from the Poli distillery, the addition of "Morbida" (soft, gentle) perfectly captures its essence. The pomace comes from Muscat Blanc grapes grown in the Euganean Hills and is distilled drip-fresh in a copper pot still using the traditional, discontinuous method. The master distiller skillfully separates the heads and tails, retaining only the exquisite heart of the distillate. After six months of rest in stainless steel tanks, the grappa is gently filtered. The result: a grappa of gentle softness and delicate aroma. Truly Poli.
