Sarpa di Poli in gift box

Sarpa means pomace in the Venetian dialect. Accordingly, the pomace for Poli's Sarpa di Poli naturally comes from the Veneto (even if the grape variety blend sounds more like a red Bordeaux). Still dripping fresh, the berry skins and seeds of the grapes are delivered to the Poli Distillery and traditionally distilled here according to the discontinuous method in an old copper still. The term discontinuous describes the elaborate method in which the distillation is completely stopped after each burning process to replace the used pomace with fresh one. The pomace is heated in the copper still, the ethanol, the grape spirit, rises into the cooling coil, condenses, and flows as brandy into a test bell. Here, the entire art and many years of experience of the master distiller are shown, who now cuts off the foreshots and feints (also called head and tail) with great sensitivity and preserves only the noble heart of the brandy with the finest aromas.

The fresh distillate now contains a good 75% vol. alcohol and must therefore be diluted to a moderate 40% vol. by carefully adding distilled water. Poli lets his grappa rest for at least six months in a stainless steel tank before it is finally cooled down to -6 °C and gently filtered before being bottled.

The Sarpa di Poli smells of fresh herbs, mint, and fine floral notes of rose and geranium blossoms. Taste: rustic and powerful - an honest grappa without frills for pure enjoyment.

Jacopo Poli

Po‘ di Poli – modest in name, masterful in the glass. For this grappa from the house of Poli, the addition "Morbida" (soft, gentle) hits the nail on the head.

The pomace comes from Muscat Blanc grapes from the Colli Euganei and is distilled fresh from the press in a copper still using the traditional, discontinuous method. The master distiller separates the heads and tails with sensitivity and preserves only the noble heart.

After six months of rest in a stainless steel tank, the grappa is gently filtered. The result: a grappa of gentle softness and fine aroma. Truly Poli.
