Jacopo Poli is known for his grappa in Schiavon, Veneto – the Vaca Mora Amaro shows what happens when this distillation experience meets the world of herbal bitters. It's based on a maceration of over ten botanicals in grappa, including orange zest, hops, wormwood, and coriander.
Deep amber in the glass. Herbal and spicy on the nose with pronounced bitter orange; on the palate, a clear bitterness, supported by mild sweetness and a long, resinous-spicy finish. The grappa base gives this amaro a leaner structure than many southern Italian examples.
Neat at room temperature as a digestif, on ice with an orange slice, or as a spritz base with dry Prosecco. Pairs well with dark chocolate or strong blue cheese.

Po' di Poli – unassuming in name, masterful in glass. For this grappa from the Poli distillery, the addition of "Morbida" (soft, gentle) perfectly captures its essence. The pomace comes from Muscat Blanc grapes grown in the Euganean Hills and is distilled drip-fresh in a copper pot still using the traditional, discontinuous method. The master distiller skillfully separates the heads and tails, retaining only the exquisite heart of the distillate. After six months of rest in stainless steel tanks, the grappa is gently filtered. The result: a grappa of gentle softness and delicate aroma. Truly Poli.
