Appassimento from Apulia: Grapes that are dried in the sun before fermentation lose water and concentrate sugars, aromas, and color. The result is a red wine with more body and depth than the price would suggest.

Cielo e Terra works with grapes from Salento , the sun-drenched peninsula at the southern tip of Apulia. The region is known for its old bush vines, high levels of sunshine, and deep clay soils—ideal conditions for the appassimento method.

In the glass, the Gran Maestro displays a deep ruby ​​red with slightly brown reflections—a typical sign of the oxidative drying phase. The nose offers aromas of baked plum, dried cherry, and a hint of cocoa. On the palate, it is soft and full-bodied, with a pleasant warmth and smooth, rounded tannins. The finish is long and slightly sweet.

Serving temperature 16–18 °C. Pairs well with grilled lamb , pasta al ragù, spicy pecorino cheese, or dark chocolate. Also enjoyable as a casual evening wine on its own.

Cielo e Terra

Cielo e Terra has two origins in Veneto: the Cielo family and the winemakers of Cantine Colli Berici. The story of Cielo e Terra began in 1908 when the Cielo family purchased land in Vicenza, near the Castelli di Romeo e Giulietta, which also included a small vineyard, Casa Defrà. In 1960, the winery was established in its current form as a cooperative, and a distribution network was set up throughout Italy. Today, Cielo e Terra exports to over 60 countries, comprises more than 1,000 winemakers with 3,700 hectares of vineyards, and is a leader in sustainability.
