Cielo Gran Maestro Appassimento Bianco

A white wine with unusual depth: Through the partial grape appassimento — the partial drying of the berries before fermentation — this Chardonnay-Fiano blend develops a richness that is rarely found in dry white wines.

Cielo e Terra from Veneto is among the most experienced producers of Appassimento wines in northeastern Italy. The combination of Burgundian Chardonnay and southern Italian Fiano brings together two very different characters: a creamy texture on the one hand, and aromatic intensity on the other.

In the glass, it shines a bright golden yellow. The nose reveals ripe mango, dried pineapple, and a hint of white peach—the typical aroma profile of Appassimento grapes, which gain their concentration through water loss. On the palate, it is full-bodied, with soft acidity and a long, slightly sweet finish with no residual sugar.

Serving suggestion: Serve at 10–12 °C. Pairs well with creamy pasta dishes, chicken in white wine sauce, or mild goat cheese. Also delicious as an aperitif with roasted nuts.

Cielo e Terra

Cielo e Terra has two origins in Veneto: the Cielo family and the winemakers of Cantine Colli Berici. The story of Cielo e Terra began in 1908 when the Cielo family purchased land in Vicenza, near the Castelli di Romeo e Giulietta, which also included a small vineyard, Casa Defrà. In 1960, the winery was established in its current form as a cooperative, and a distribution network was set up throughout Italy. Today, Cielo e Terra exports to over 60 countries, comprises more than 1,000 winemakers with 3,700 hectares of vineyards, and is a leader in sustainability.
