Bourgogne Chardonnay Couvent des Jacobins

The Bourgogne Blanc Couvent des Jacobins is made exclusively from Chardonnay grapes, sourced from across the Côte d'Or growing region. The grapes are gently pressed in modern presses, and the must is then fermented and aged in equal parts in stainless steel tanks and used oak barrels. This process allows the wine to retain its fruity freshness in the stainless steel tanks while simultaneously gaining the richness and harmonious balance imparted by the oak. The Chardonnay is highlighted on the label because a Bourgogne Blanc is not always made from a single varietal. According to AOC regulations, the addition of Aligoté is permitted—and quite common. Color: pale, shimmering golden yellow. Aroma: elegant bouquet of fresh apricots, ripe pears, and grapefruit. Taste: full-bodied on the palate with a juicy, fruity structure and very subtle hints of oak; the overall impression is very harmonious, elegant, and rounded with a delicate, smooth finish.
