The Pinot Noir grapes for Bourgogne Rouge Couvent des Jacobins come from across the Côte d'Or appellation, encompassing the Hautes Côtes de Beaune, the Hautes Côtes de Nuits, the Côte Chalonnaise, and the Auxerrois. Using traditional methods, the wine undergoes three weeks of maceration on the skins. A quarter of the wine then matures for ten months in used French oak barriques. To balance itself before bottling, the wine is aged for a final period in stainless steel tanks before being bottled. Color: bright ruby ​​red in its youth, developing elegant garnet reflections with age. Aroma: highly aromatic with notes of red fruit compote, blackcurrant blossom, and subtle smoke.
