Domaine Lafage Cantaca

The Cantaca comes from a section of the vineyard cultivated according to the principles of regenerative agriculture. This includes low planting density, no plowing, and the use of biochar. In Roussillon, a region affected by extreme drought, water management methods are being tested to better utilize scarce water resources. Biochar acts as a kind of micro-sponge, improving the biological, chemical, and physical fertility of the soil. The Chardonnay, Petit Manseng, and Sauvignon Blanc grapes undergo 24 hours of maceration, followed by 30 days of juice stabilization. Fermentation takes place in barrels, and the wine then matures for 18 months on its fine lees. The 2022 Cantaca displays a bright golden-yellow hue. The bouquet is very intense and exotic, characterized by notes of pineapple and mango, apricot and peach, mingling with floral and cedarwood notes. These aromas are mirrored on the palate, accompanied by remarkable length and refreshing liveliness. The finish is flavorful and full-bodied. This wine should be enjoyed within three years. It pairs perfectly with ceviche, chicken tagine with lemon, monkfish or skate with sauce meunière, and duck à l'orange.
