Within the appellation, the label Côtes du Roussillon Villages stands for the more demanding category: stricter requirements, deeper colors, more concentration. The red wines are mostly based on Grenache, Syrah, and Carignan – grape varieties that ripen particularly well in this heat and give the wine depth and character. Individual municipalities such as Tautavel are allowed to add their name to the label and are considered particularly renowned.
