Élévation Vielles Vignes Côtes du Roussillon Villages Rouge AOP

The vineyard consists of old vines located in the Agly region of the eastern Pyrenees. The vines grow on red schist hills, which are bathed in sunshine and enjoy brisk winds, allowing the grapes to thrive. The grapes are carefully selected according to yield and health. Ripeness is checked by tasting the grapes. The Syrah and Grenache grapes are processed separately, but both undergo the same vinification. The Élévation matures for eight months, 50% in barriques and 50% in large casks. In the glass, the Élévation displays a deep garnet red with violet hues. A complex bouquet of dark berries, sweet spices, acacia, and licorice greets the nose. The initial mouthfeel is full and generous, revealing smooth tannins and remarkable aromatic complexity. The exceptionally long finish reveals spicy and toasty aromas.
