Banfi's Stilnovo employs a method that has almost been forgotten in Tuscany: Governo all'uso Toscano . In this method, dried grapes are added after the primary fermentation, triggering a second fermentation—the result is a red wine with a distinctive texture and vibrant fruit.
Banfi winery is among the most renowned in the Brunello region around Montalcino. Founded in the 1970s, the winery is now one of the largest privately owned estates in Tuscany. Stilnovo is Banfi's homage to the region's peasant winemaking tradition—and to a method once practiced in almost every Tuscan cellar.
In the glass, it displays dark cherry, a hint of plum and violet, underpinned by spicy notes of clove and cinnamon. The secondary fermentation, initiated by the Governo method, results in a slightly creamy texture, soft tannins, and a refreshing acidity on the finish.
Serving temperature: 16–18 °C. Best drunk now — this wine is designed for fresh fruit, not for long-term aging. Pairs well with:
- Pasta with ragù or tomato sauce
