Ziereisen Pinot Gris dry "Jasper"

The Jaspis from Ziereisen is not a pleasing Pinot Gris — it is a wine that needs time and rewards it. Named after the gemstone that literally occurs in the soil of the vineyards, it reflects its origin directly in the glass.

Weingut Ziereisen is located in the southernmost tip of Germany, in the Markgräflerland near the Swiss border. The vines for the Jaspis have been standing since 1958–1962 on Jurassic limestone with a clay-loess-iron layer — a soil that gives the wine a distinct mineral tension. Spontaneous fermentation, long aging on the lees in large wooden barrels, no fining, no filtration. This is not a coincidence, but a philosophy.

In the glass, it is a Pinot Gris with substance: ripe pear and yellow plum, plus nuances of beeswax and flint. The palate is dense, the acidity clearly contoured without sharpness, the finish long and spicy with a hint of toasted hazelnut. Not a light-bodied aperitif Pinot Gris, but a white wine with the character of a Burgundy.

Serving suggestion: 12–14 °C. With veal sweetbreads, grilled zander, aged Comté, or a risotto with porcini mushrooms.
