Jaspis Pinot Noir dry Zipsin Baden country wine unfiltered
Jurassic limestone soil in the southern Markgräflerland region, vines from the years 1958 to 1965 – various Freiburg clones, deeply rooted and needing little explanation. Jaspis is Hanspeter Ziereisen's top selection: only parcels that truly impress in a given vintage bear this name.
The vinification follows a strict non-intervention approach: spontaneous fermentation, six to eight weeks of maceration, and approximately 20 months of lees aging. No fining, no filtration. After bottling, the wine rests in the cellar for another 2.5 years – only then is it released for sale. What comes into the glass is clearly structured: dark cherry, graphite, a hint of dried herbs. The body is dense, the tannins ripe and precise, the finish long and mineral without heaviness.
Drinking window: now until 2035+, with aeration or decanting. Pairs well with wild boar loin, braised lamb shoulder, or aged Époisses.
