Jaspis Pinot Noir dry Zipsin Baden country wine unfiltered

Jura limestone soil in the southern Markgräflerland, vines from the years 1958 to 1965 – various Freiburg clones that are deeply rooted and need little explanation. The Jaspis is the top selection from Hanspeter Ziereisen: only parcels that are truly convincing in a vintage are released under this name.

Vinification follows consistent non-intervention: spontaneous fermentation, six to eight weeks of maceration, around 20 months on the lees. No fining, no filtration. After bottling, the wine rests in the cellar for another 2.5 years — only then does it go on sale. What ends up in the glass is clearly structured: dark cherry, graphite, a hint of dried herbs. The body is dense, the tannins are ripe and precise, and the finish is long and mineral without heaviness.

With air or decanting. Pairs with wild boar loin, braised lamb shoulder, or aged Époisses.
