Ziereisen Chardonnay dry "Jasper"

The Jaspis is the top selection from Hansjörg Ziereisen's old Chardonnay vines in the Baden Markgräflerland — a selection of the best barrels that shows what a Burgundian grape variety can achieve on loess soil in the Kaiserstuhl foothills.

Weingut Ziereisen is one of Germany's most consistent natural wine addresses. Hansjörg Ziereisen cultivates his vineyards without synthetic intervention, ferments spontaneously, and gives the wines time in wooden barrels. The Jaspis matures in barriques, which allows fruit, wood, and minerality to merge into a dense, but not heavy, white wine.

In the glass, it shows yellow pear, toasted hazelnut, and a hint of beeswax, underscored by a fine smokiness from the barrel aging. The texture is creamy without being broad, the acidity gives the wine hold and length. The finish: salty, long, with a mineral aftertaste.
