Ziereisen Chardonnay dry "Jasper"
Jaspis is the top selection from Hansjörg Zireisen's old Chardonnay vines in the Baden Markgräflerland — a selection of the best barrels that shows what Burgundian grape varieties can achieve on loess soil in the Kaiserstuhl foothills.
Ziereisen Winery is one of Germany's most dedicated natural wine producers. Hansjörg Ziereisen cultivates his vineyards without synthetic intervention, ferments spontaneously, and allows the wines time to mature in oak barrels. The Jaspis grapes are aged in barriques, resulting in a dense yet not heavy white wine where fruit, wood, and minerality combine to create a rich, yet not heavy, wine.
In the glass, it displays aromas of yellow pear, roasted hazelnut, and a hint of beeswax, underpinned by a subtle smokiness from barrel aging. The texture is creamy without being heavy, and the acidity gives the wine structure and length. The finish is salty and long, with a mineral aftertaste.
