The Ziereisen winery is located in Efringen-Kirchen, in the far south of the Kaiserstuhl region, near the Swiss border. Hans-Peter Ziereisen is considered one of Germany's most dedicated natural wine producers: minimal intervention in the cellar, spontaneous fermentation, no fining agents. The wines need time—and it shows.

Initially reserved on the nose, slightly reductive, with yeasty notes and a core of yellow stone fruit—quince, mirabelle plum—along with nutty and subtly vegetal undertones. On the palate, it's lively: a clear, tart, and juicy acidity without harshness, mineral depth, and a touch of residual carbonation for freshness. The finish is long, taut, and grippy—not a bland supermarket white wine, but a wine with character and tension.
