Ziereisen White Burgundy

Weingut Ziereisen is located in Efringen-Kirchen, in the far south of the Kaiserstuhl on the Swiss border. Hans-Peter Ziereisen is considered one of Germany's most consistent natural wine producers: minimal intervention in the cellar, spontaneous fermentation, no fining agents. The wines need time — and they show it.

On the nose, initially reserved, slightly reductive, with yeasty tones and a core of yellow pome fruit — quince, mirabelle — as well as nutty and slightly vegetal undertones. In the mouth, it is lively: a clear, tart-juicy acid structure without sharpness, mineral depth, a hint of residual carbon dioxide for freshness. The finish is long, taut, and shows grip — not a smooth supermarket white wine, but a wine with character and tension.
