Fiano from an altitude of 650 meters in Cilento — that's a different world than the sweltering lowlands of Campania. More freshness, more excitement, more time to mature.
San Salvatore farms his land organically in the Cilento National Park. The plots around Stio lie on volcanic-calcareous soil; the altitude ensures cool nights and a long growing season — both of which significantly influence the soil's acidity.
In the glass, the Pian di Stio displays a pale straw yellow with green reflections. The nose offers bergamot, white blossoms, and a hint of beeswax, underpinned by a subtle hazelnut note typical of mature Fiano wines. On the palate, it is dense yet vibrant: the acidity supports the wine without being harsh. A salty, lingering finish with a mineral aftertaste.
Drinking window: now until 2029. Serving temperature 10–12 °C. Pairs well with grilled sea bass with capers, pasta alle vongole or a mild goat cheese from the Apennines.
