Fiano from 650 meters altitude in Cilento — that is a different world than the sultry lowlands of Campania. More freshness, more tension, more time to ripen.
San Salvatore manages its estate in the Cilento National Park organically. The parcels around Stio lie on volcanic-calcareous soil; the altitude ensures cool nights and a long growing season — both decisively shape the acid structure.
In the glass, the Pian di Stio shows a bright straw yellow with green reflections. On the nose, bergamot, white blossoms, and a hint of beeswax, underneath a subtle hazelnut note that is typical for aged Fiano wines. On the palate, dense yet lively: the acidity carries the wine without stinging. Salty, long finish with a mineral aftertaste.
Serving temperature 10–12 °C. Pairs well with grilled sea bass with capers, pasta alle vongole, or a mild goat cheese from the Apennines.
