A Fiano that shows what this southern Italian grape variety can achieve when given time and wood: complex, full-bodied, with a depth that one does not necessarily expect from Campania.
San Salvatore is located in Cilento, one of the wildest and least developed parts of Campania. The winery cultivates its vineyards with a focus on indigenous grape varieties – Fiano is part of its DNA. The Pian di Stio Evoluzione is a unique project: grapes from a clearly defined micro-terroir around Stio, selectively harvested, and aged in French oak barrels.
In the glass, it displays an intense golden-yellow color, signaling its maturation. The nose offers aromas of hazelnut and caramelized almond, along with vanilla from the oak aging and a hint of dried apricot. On the palate, it is full-bodied with a soft texture, well-integrated acidity, and a long, nutty-spicy finish.
