Gillo Dorfes Aglianico

Gillo Dorfes Aglianico
Aglianico from the Cilento — powerful, structured, with the makings for long aging. The Gillo Dorfles shows what this southern Italian grape variety can do if you give it time.
San Salvatore is located in the heart of the Cilento National Park in the province of Salerno, Campania. The winery farms organically and focuses on autochthonous grape varieties such as Aglianico, Fiano, and Greco. The Gillo Dorfles is named after the Italian art critic and philosopher born in 1910 — a reference to depth and stubbornness.
After 24 months of aging in French oak barrels, the wine shows a dense ruby red. On the nose, Morello cherry and blueberry jam, plus pink pepper, cinnamon, and a hint of licorice. On the palate, warm and dense, with velvety tannins and a precise acid structure that ensures freshness and length. The finish is spicy, long, with a slightly mineral aftertaste.
- Food: Braised lamb shank, Cinghiale al sugo, aged Pecorino, or Cacio e Pepe
- Temperature: 16–18 °C, feel free to open an hour before drinking
