Cecerale Fiano

Cecerale Fiano is a dry white wine from the Campania region of southern Italy, produced by the San Salvatore winery in Paestum in 1988. The wine is made exclusively from the indigenous Fiano grape variety and is cultivated at altitudes of 150–210 meters on calcareous and clay-rich soils, which give it a distinct minerality.

In the glass, it displays a pale straw yellow color with subtle greenish reflections. The nose is fruity and floral with aromas of green apple, pear, a touch of peach, citrus, white blossoms, and a delicate mineral undertone. On the palate, the Cecerale Fiano is fresh, juicy, and slightly salty, with a clear yet well-balanced acidity and a creamy, textured mouthfeel typical of Fiano.

The wine matures for several months in stainless steel, often on the lees, resulting in a rounded, harmonious character with a long, lingering, fruity, and slightly floral finish. It pairs particularly well with seafood, grilled fish, light pasta dishes, or light appetizers. It is ideally served at 8–10 °C and, depending on the vintage, is also suitable for aging for several years.
