Ceraso Aglianico

Aglianico without wood — that sounds like an experiment, but at Ceraso it's standard practice: The steel tank preserves the fruit of the vintage and shows what the grape variety from Campania can really do.

San Salvatore operates in Cilento, one of southern Italy's wildest nature parks. The winery focuses on organic farming and works closely with the terroir—calcareous soils, marine influence, and intense sunshine. Aglianico is the flagship grape variety here, and Ceraso is its most approachable expression: young, direct, without the weight of long oak aging.

In the glass, a deep ruby ​​red with violet reflections. The nose offers blackberry, ripe plum, and a hint of caramelized chestnut—warm, but not heavy. On the palate, it becomes clear why stainless steel tanks were the right choice here: the fruit remains vibrant, the tannins are silky without harshness, and the acidity is fresh and integrated. The finish is mineral, with a slight salinity from the influence of the Tyrrhenian Sea.

Serving temperature 16–18 °C. Pairs well with grilled lamb, pasta al ragù, aubergine parmigiana, or a mature pecorino. Drink now until 2028.
