Ten years of yeast aging on a single location: The Giulio Ferrari Riserva del Fondatore is the prestige cuvée of the Ferrari house from Trentino. The grapes come exclusively from the Maso Pianizza, a high altitude of over 600 meters, where Chardonnay ripens slowly under alpine influence and develops a minerality that hardly any sparkling wine from the south achieves.

On the nose, honey, white chocolate, roasted almonds, and a hint of vanilla — the result of the long autolysis. In the mouth, velvety perlage, dense structure, long dry finish with citrus-fresh tension. Serving temperature 8–10 °C. Pairs with lobster, scallops with saffron sauce, or as a standalone conclusion to a festive menu.
