Ghost Corner Wild Ferment SB, Cederberg

Spontaneously fermented without the addition of cultured yeasts — the Ghost Corner Wild Ferment Sauvignon Blanc from the Cederberg region of South Africa shows what happens when you give nature a little more leeway.

The Cederberg winery is situated at an altitude of almost 1000 meters in the Cederberg mountain range, about 200 kilometers north of Cape Town. The high altitude brings cool nights that preserve the aromatics and acidity—unusual for South Africa. The Ghost Corner line represents the estate's wilder, more artisanal bottlings.

In the glass, the wine displays aromas of white pear, quince, and a subtle tropical note of pineapple. On the palate, a creamy texture is supported by fresh acidity—the wild fermentation imparts a light yeasty spiciness and depth that single-varietal, cultured yeast versions often lack. The finish offers ripe apricot and nectarine, long and juicy.

Serving suggestion: Well chilled at 10–12 °C. Pairs well with grilled cod, goat cheese salad, or a Thai curry with coconut milk. Best enjoyed now until 2027.
